Condiments
6 cups blueberries
3 cups sugar
1 lime, juiced and zested
Alternate recipe:
8 cups blueberries
2 cups sugar
3 limes zested
1 1/2 limes, juiced
2 tsp calcium water
1 cup sugar
2 tsp pectin
Mix all ingredients and bring to a boil. Let cook at a gentle boil until a jammy consistency (this may take up to an hour). Jar.
Alternate recipe:
1) Mix blueberries, 2 c. sugar, lime juice, zest and calcium water. Cook at medium heat until blueberries burst and begin to look spreadable.
2) Blend sugar and pectin, then add to blueberry mixture. Bring to a solid boil and jar. The cooking mixture will still appear runny, but jells thoroughly once cooled. (You can check the jell with a spoon in the freezer to be sure).
Notes:
Recipe using pectin gels nicely even when scaled down to 3 c. berries and 3/4 tsp. calcium water & pectin.
